VINIFICATION After the extremely delicate de-stemming, the first fermentation takes place in steel containers, thanks to the action of indigenous yeasts and the preparation of a pied de cuve. Each vineyard is vinified separately and assembled for refermentation.

NOTES It is a Blanc de Blancs sparkling wine that is produced from 100% Chardonnay grapes in purity, with artisanal processing.The vineyards are processed with the biodynamic agriculture method that allows to obtain qualitatively perfect fruits, without the use of chemical synthesis, neither in the vineyard, nor in the cellar. The harvest takes place with the manual method and from the vineyard the bunches are carefully chosen. This is followed by a very delicate destemming-crushing and a first phase of fermentation in steel. The refinement takes place on the lees for a period of 30 months. Each of the vines is vinified by itself and the assembly takes place only subsequently, to allow a refermentation in the bottle.
