TYPE OF SOIL Of volcanic origin, tuffaceous, rich in skeleton.
AGE OF VINES 16 years.
VINIFICATION The grapes that are not destemmed undergo a soft pressing. The must ferments in steel tanks, at a controlled temperature, of about 18 degrees. This is followed by a refinement of the wine on the fine lees for 5-6 months, in order to enrich its organoleptic characteristics.
TRAINING SYSTEM Espalier with spurred cordon pruning.
COLOR To the eye it is pale pink with an almost creamy perlage.
BOUQUET The nose is rich, broad, with slight hints of bread crust, red fruits, raspberry and cassis, in the background, mineral and cloves.
PAIRINGS As an aperitif, or throughout the meal, being able to accompany first courses based on fish and vegetables, roasted fish, fresh and even fatty cheeses, and fried, in particular, those of fish.
TASTE In the mouth it is fine, savory and the Pinot Noir restores its character, giving body and persistence to a wine of sure longevity.
NOTES The Classic Method is obtained from a single Pinot Noir vineyard, located at the highest altitudes of the Estate. The particular microclimate of the lake, the important thermal excursions, the minerality of the tuffaceous soils and the good ventilation, allow to harvest the perfect grapes to produce an excellent sparkling wine.
AGING The base wine is bottled for the second fermentation and left on the lees for 24 months in the aging cellars dug into the tuff under the Salviano Castle. The final phase of remuage and dégorgement follows.
