COLLECTION
once the grapes have dried naturally on the plant, they are gradually harvested. It lasts for a few weeks starting from the second ten days of September.
VINIFICATION
the alcoholic fermentation is started in steel, at a controlled temperature of 20°C, and then continues in French oak barriques and blocked at the desired level of balance between alcohol content and sugar concentration.
REFINEMENT
in barriques at a temperature of 16°C with periodic batonnage.
