Description

Not all harvests allow the winemaker to challenge the ripening times of the grapes. It is a slow, precise, onerous job that does not allow errors of evaluation. The grapes must be healthy, intact, ripe, in a few words perfect. They are selected, harvested and delicately placed on the plateaus for the withering which is rigorously natural, with the sole aid of the sun and the wind. This process takes 5/6 weeks. The raisins are destemmed manually, the fermentation is slow and at low temperatures. The refinement takes place in small oak barrels. Characteristics It has an amber yellow color with golden reflections. The aromas are intense and persistent and recall dried and candied fruit, in particular orange peel, ripe tropical fruits with a background of honey and jams and a mineral note. The taste is sweet but with the right support of freshness. It is a harmonic fusion of sapidity, sweetness and softness. Reminiscent of dried figs, dates, prunes, with hints of vanilla. Excellent persistence and almond finish. Grape variety and production area It is produced with grapes from the Pigato vine harvested in the company vineyards of Ortovero and "Ponterotto". How to serve and store it Store in the cellar in a horizontal position, away from sources of light, at a constant temperature between 10 and 15°C and with humidity around 70-75%. It should be served in medium-sized tulip-shaped glasses with a slight flaring at a temperature of 12°/14°C, uncorking it a few minutes before serving.
