This ancient vine is the pride and joy of Friuli, the grapes are harvested manually and differentiated according to maturation with twice-weekly passages and takes place throughout the month of October. For the vinification of this wine, 10% of the harvested grapes are vinified in the classic way, soft pressing, settling and controlled fermentation. The remaining 90% of the grapes are left to dry for over a month, losing about 40% of the weight. The highly concentrated must obtained is fermented in small oak barrels, where it remains until the summer. Then the two wines are blended and aged for another 4 months in steel barrels. The refinement takes 6-8 months in the bottle.

Description

LAND: Hillside with South-West exposure, Di colluvial origin. Composed of marl in depth and sandy clayey from hilly runoff on the surface. This lower median hilly area is always very windy, maintaining a dry and cool environment, which allows slower ripening but able to give freshness and nerve to Picolit. HARVEST: The harvest is manual and differentiated according to maturation with weekly passages takes place throughout the month of October. The harvest period is visually evaluated at the achievement of optimal ripening of the grapes. VINIFICATION: every single collection is placed at wither for over a month, eventually losing about 40% of the weight. The pressing takes place through a traditional press, the must obtained very concentrated, it is fermented in barrels traditional Friulian 700L Slavonian oak, in which it remains until the following autumn, in winter it is removed from the woods, e kept in steel until spring. Bottling usually takes place during the week after Easter, following the lunar calendar. AGING IN THE BOTTLE: 24 months, usually the entry on the market coincides with easter past two years from that of bottling CHARACTERISTICS OF THE WINE: White wine with a deep golden yellow colour. Very fine perfume and intense, floral, fruity, slight hint of musty due withering, incredibly complex. Sweet on the palate, velvety, harmonious and persistent. Rather high alcohol content. Due to its characteristics it is a "meditation" wine, therefore for taste alone, in important moments.
