TYPE OF SOIL Clayey marl alternating with layers of sandstone (calcified sands).
AGE OF VINES 5-25 years
VINIFICATION The grapes are selected on sorting benches and subsequently de-stemmed and pressed with a pneumatic press. The must obtained is decanted for 12-24 hours before being fermented with selected yeasts at a controlled temperature (16-18 degrees) for 15-20 days until the sugars are exhausted.

BOUQUET The olfactory profile ranges from fruity notes to floral scents.
PAIRINGS Excellent as an aperitif, it goes beautifully with velvety, soups and salads. Excellent with a vegetable couscous dish.
TASTE Ripe apple, acacia and citrus fruit open to a full, elegant taste marked by an unmistakable flavor. Balanced, fresh and satisfying, it closes with a nice finish, of great persistence.
NOTES A great classic, both from the Bastianich winery and the appellation. A fresh and multifaceted Pinot Grigio, whose worldwide success reflects a great ability to combine with multiple dishes, from aperitifs to more structured first and second courses.
AGING Period of batonnage, that is the periodic handling of the yeasts, which allows the wine to naturally enrich itself with natural antioxidants and to refine for 4 months. After clarification and filtration, the Pinot Grigio is bottled and left to rest for 30 days before being marketed.
