A passito that contains the essence of Verdicchio, what is most holy in the saint: for this reason the derivation of the name from the expression Santa Sanctorum. The Passito Wine is the result of the processing of dried grapes in the vineyard, which retain only the pure soul of the Verdicchio grape, and which then ferment slowly in small oak barrels.
VARIETY Verdicchio (native) BOUQUET Rich in persistent sweet nuances of candied exotic fruit, peach in syrup, apricot in spirits, dried fruit and honey, with a light final touch, delicately vegetable and spicy, reminiscent of vanilla TASTE Moderately sweet, soft and velvety with the balance well supported by good freshness and flavor. It leaves a long trail of delicately toasted dried fruit and sweet spices in the mouth PAIRINGS Small pastries, baked desserts also with creams, pies with yellow fruit in syrup or dried fruit in general, apple pies, traditional biscuits, fois gras terrine made with the same wine, traditional regional cheese-based desserts, medium-aged and spicy cheeses.
