AGING At least 36 months on the lees. ORGANOLEPTIC CHARACTERISTICS View - Straw yellow color with golden reflections; extremely fine and persistent perlage. Nose - Fine and intense aroma with hints of hawthorn, notes of apple, hazelnut and dried fruit crowned by a light crust of bread. Flavor - of fine harmony and complexity. It is fully expressed with sensations of freshness and vivacity, in a wise balance between softness and measured acidity; great finesse in the velvety and persistent finish. Citrus aftertaste. PAIRINGS For the whole meal, a preference for molluscs, crustaceans, fish and risottos. Unequaled as an aperitif accompanied by cheeses and cold cuts. Excellent as a continuation of the evening.
