TYPOLOGY Dry white wine IGT Toscana PRODUCTION AREA Municipality of Gavorrano Location Grilli. In the valley between Vetulonia and Giuncarico. In the heart of the Tuscan Maremma. GRAPES: Sermentino and Sangiovese vinified in white. TYPE OF SOIL Clayey-skeletal soil, based on Galestro (clayey schist stone) and Alberese (marly limestone). VINIFICATION 6 months in steel followed by a variable period in glass, in order to best preserve its freshness. COLOR Pale straw yellow with slight greenish reflections. AROMA Pleasant fruity scents, fresh notes of citrus and almond. PAIRINGS Ideal if combined with a fresh aperitif. It pleasantly accompanies fresh pasta, catch of the day and seafood, as well as various white meat dishes. TASTEWine with generous richness in the mouth, lively and cheerful, with a sensation of great freshness on the finish. As happens in other noble wine-growing regions, the disciplinary for the production area allows the appellation IGT Toscana Rosso (and Bianco) to be non-vintage, if it refers to a blend of different vintages in a percentage greater than 15%. Hence the qualitative choice of making a fresh and pleasant wine that is constant over time; a wine that is always recognizable even in future harvests. The winemaking technique therefore provides for the use of the last vintage associated with the reserves kept in the cellar.
