Metafisica Toscana Bianco IGT 2021 - Castello Romitorio

Chardonnay and Trebbiano combined are much more than the simple sum of their individual parts. These create a perfectly balanced Super Tuscan, rich in minerality and freshness, surprisingly lively yet anchored in tradition. The first Chardonnay vineyard in Castello Romitorio was planted in the early 1990s at the behest of Sandro Chia who had sensed the potential of this vineyard in the Montalcino area. The initially chosen plot of land turned out to be not ideal for Chardonnay, therefore the Chia family decided to transfer the vineyard to another side of the estate. Today, this tiny vineyard facing north-west has found its ideal environment, being at about 400m slm with the roots spreading out in soil composed mainly of marl. Trebbiano became part of the blend with the 2021 vintage, following the acquisition of one of the oldest vineyards of Trebbiano Toscano (or Procanico), located in Loc. Case Sparse (Scansano). This vine is typical of Maremma and is considered one of the most versatile varieties, as it easily adapts to different climates and temperatures. Nonetheless, if grown in the perfect terroir, Procanico can achieve a balance and elegance that rivals that of the best white wines worldwide. The must macerates on the skins for 48 hours at low temperatures, before gentle pressing, and then continues with further cooling for another 48 hours. Following natural sedimentation, the liquid starts the fermentation process. The resulting wine ages on the sediments in Barrique for 9 months, followed by a period of aging in the bottle inside the cellar at controlled temperatures.
