The Catarratto grapes come from vineyards cultivated at 700 m slm , while the Chardonnay grapes at 350 m slm
Harvest: Chardonnay: 7 - 8 August; Catarratto: 2 - 3 October.
Bottling: single lot .
FERMENTATION
Method: controlled temperature , in stainless steel tank.
Temperature: 16 - 18°C.
Duration: 10 - 12 days.
Malolactic: no .
ORGANOLEPTIC CHARACTERISTICS
Straw yellow color with greenish hues.
Broad and exuberant bouquet.
Fresh and broad flavor with excellent balance between acidity, flavor and volume.
PAIRINGS
To drink at 16 - 20°C. both with meat and fish dishes. Excellent with hard cheeses.
