These are clusters with a thick and consistent skin, high alcohol potential and sustained acidity, which we know can provide interesting and unusual nuances in the raisin version. The grapes, harvested by hand after perfect ripeness on the vine, are placed in wooden crates of 7-8 kg each; they are then left until November in a cool, ventilated room where, thanks to the raisining technique, they lose about 30% of their initial weight, resulting in a concentration of sugars and all the aromas. This is followed in December by the crushing and soft pressing of the dried grapes, the static decantation of the must and the alcoholic fermentation, which, as it fails to complete completely, leaves a high sugar residue. Excellent in combination with cream-based desserts and a fabulous companion for homemade focaccia. A meditation wine, it is also excellent with blue cheeses.
