CHARACTERISTICS OF THE PLANTS The vineyards are trained in rows (counter-espalier) with approximately 5,200 vines per hectare facing east. TIME OF COLLECTION AND VINIFICATION The Passerina grapes are harvested by hand after a meticulous selection at the end of September and beginning of October depending on the climatic trend. They are destemmed, softly pressed; the must obtained is statically decanted and left to ferment in a stainless steel tank at a controlled temperature of 16-18 degrees Celsius.
