CHARACTERISTICS OF THE PLANTS The Trebbiano Abruzzo vine is trained with the Abruzzo pergola system with approximately 1,100 plants per hectare, while the Passerina and Chardonnay are trained using the epaulette system with 5,200 plants per hectare. The exposure is south and therefore the grapes reach a high degree of ripeness and concentration. HARVEST AND VINIFICATION PERIOD These are the last white grapes to be harvested, generally in the second ten days of October. The care given to the cultivation and harvesting of the grapes is worthy of the great wines, as is its vinification. The grapes are destemmed, crushed and after a short maceration of about 15 hours, the traditional white vinification takes place at a controlled temperature. Both fermentation and aging take place in 25 hl Slavonian oak barrels. After bottling, the wine rests for 12 months before being released for sale.
