From gradual selections made in our vineyards, and from traditional and non-intrusive winemaking techniques, comes this version which aims to express the fundamental characteristics of Pecorino, enhancing, without forcing, its fresh and non-trivial aromatic complexity, and the particular gustatory profile in which alcohol, acidity and minerality are well present and in good balance with each other.

Straw yellow with light golden reflections, dense in the glass. The nose is elegant, of citrus fruits and white flowers, rounded off by honeyed notes but vibrant with characteristic medicinal references. It enters the mouth soft, immediately supported by a juicy reaction of the acids and a nervous minerality, which create an excellent balance shifted upwards and contribute to a finish with a long and stimulating persistence. It goes well with intense dishes with a creamy or fatty tendency, such as risotto, gnocchi with cheese sauce, fried fish.
