Exposure North-west Inclination Steep slope Age 20 years Spurred cordon breeding Density 4,000 vines per hectare Yield per hectare 12,000 Kg WINE Type White, sustainable, full-bodied, dry, intense fruit and spice. Denomination IGT Colline Teatine Grapes 50% Chardonnay, 50% Pecorino Harvest Mid and end of August Service 14° C Vinification Pressing of the Chardonnay grapes, racking off the skins, must transferred to the vinificator at 10°C. After 10-12 days, same process for Pecorino grapes, transferred in the same quantity to the same vat. Complete malolactic fermentation in tonneaux with bâtonnage for 6 months. Followed by 12 months in the bottle. Sensory Banana, kumquat, passion fruit, toasted almonds.
