Plant density of 5000 vines per hectare and production of 60 q. Harvest: manual in small 20kg baskets and selection of the grapes upon arrival in the cellar, second ten days of September Vinification: soft pressing and natural cold decantation of the must. Only the must ferments in steel vats at a low temperature to enhance the original characteristics of the terroir. It closes with 8 months of aging in the steel vat and on the fine lees Colour: straw yellow with greenish reflections Smell: fragrant, rich in Mediterranean climatic notes Flavour: enveloping, persistent in a context of great balance Storage: protected from light, with horizontal bottle, controlled temperature and humidity 17°C – 70%. Serve chilled at a temperature of 11°C Pairings: seafood appetizers and Mediterranean cuisine, delicate and white meats and aged cheeses.
