Santa Cristina Vin Santo Valdichiana Toscana DOC - Antinori

The grape harvest began in mid-September and lasted until the first days of October, as it does every year. The vinification requires that the grapes have been carefully monitored and harvested when they reach optimal maturity. The selection took place directly in the drying plateaus, a fact which made it possible to maintain the integrity of the bunch by avoiding the transfer from the crate to the trellis used in the past. After the drying process which lasted about five months, the grapes with a high sugar content were softly pressed, the free-run wine thus obtained was placed directly into oak barrels where the alcoholic fermentation took place. This stopped spontaneously when the wine reached 17% alcohol, leaving a natural residual sugar.
