CHIUSOLILLO is an organic white wine DOC Castel del Monte Vino produced from the pure vinification of Chardonnay grapes. It has a marked drinkability linked to an intense aromatic freshness. SOIL CHARACTERISTICS the excellent texture and the presence of active limestone stimulate the biosynthesis of aromatic compounds. PLANT DENSITY 2000-2200 plants/Ha for old tents/4500-5000/Ha for espaliers TRAINING SYSTEM with renewable branches on the tents, spurred cordon on the espaliers. VINES 100% Chardonnay VINIFICATION TECHNIQUE soft pressing, fermentation at a controlled temperature of 15°C in stainless steel and conservation on the fine lees. MALOLACTIC FERMENTATION carried out in part and in particular years AGING TECHNIQUE refinement and stabilization in stainless steel for 6-8 months, through frequent batonnages; it is followed by aging for a few months in the bottle.
