Etna Bianco Superiore Mari di Ripiddu Filippo Grasso Mari di Ripiddu Etna Bianco Superiore Filippo Grasso Grapes: 95% carricante, 5% catarratto Production area: vineyards on the northern slope of Etna, volcanic soil, stony, dry, draining and rich in minerals. Contrada Calderara, municipality of Randazzo, 650 meters above sea level. Vineyards: counter-espalier with high planting density. Yield per hectare: 50 quintals Vinification: soft pressing of the grapes, fermentation at controlled temperature. Organoleptic characteristics: Colour: pale straw yellow with greenish reflections Bouquet: delicate and elegant, with hints of broom and hawthorn; green apple and yellow fruit on the finish Taste: fresh and very mineral, pleasantly acidulous Pairings: white meats, fish and shellfish, semi-mature soft cheeses, also excellent to accompany more decisive and intense cheeses; battered vegetables, first courses based on fish or vegetables, both vegetable and meat broth. Serving temperature: 12 degrees C. Alcohol content: 12.5-13% vol.
