Description

PRODUCTION TECHNOLOGY From the Chardonnay grape harvested in the Crevoglio vineyard comes a sparkling wine with refermentation in an autoclave (Marinotti method). Once the harvest is complete in mid-September, the base wine is obtained, with fermentation at a controlled temperature, which is already sweetened and yeasts added for refermentation (Presa di Spuma) in the first days of the year following that of the harvest. This phase continues for 28 days at a temperature ranging from 17 to 19 °C; subsequently the product, which has now become sparkling, remains in an autoclave to mature on fermentation residues for 8 months.

TASTING NOTES removed right from the visual aspect with a nice froth and a subtle perlage; the color is a brilliant straw yellow, a pleasant and comforting maturity emerges on the nose, in the mouth it is intense, lively and balanced. Definitely a decisive, captivating brut that does not lose the soft character of the grape variety.

GASTRONOMIC COMBINATIONS At a temperature of 10-12 °C it is appreciated as an aperitif, with fish and preferably with fresh cheeses. Try it on a hot appetizer of vegetables and puff pastry.
