PRODUCTION TECHNOLOGY The wines obtained from these two vines, in April of the year following that of the harvest, form the base wine which is bottled, where, after chaptalization and the immediate addition of batch yeasts, it completes the refermentation. Once this process which gives rise to the characteristic foam is completed, the maturation on the lees follows which lasts about 4 years (48 months). After this stop, the "clarification" and "disgorgement" operations prepare it for consumption, which takes place about five years after the harvest.
TASTING NOTES Fine and intense perlage, persistent foam envelop a compact straw colour; the aroma is complex with now distant memories of fruit, pleasant presence of yeast and bread crust, almond and candy. Captivating gustatory impact pleasantly concluded by a bitter sensation.
GASTRONOMIC COMBINATIONS Excellent as an aperitif and toast at any time of the day; at the table it goes delicately with hors d'oeuvres, well-structured first courses and elegant second courses.
