Wine produced from grillo grapes grown organically on the Sambuca di Sicilia estate, in the province of Agrigento. The vineyard is grassed and grows on calcareous soils at about 200 meters slm in the shade of a wonderful tuff quarry, caressed by the winds that arrive from the nearby Mediterranean.

Description

Cultivated with the Guyot system with a density of 4,500 plants per hectare, the vineyard is harvested between the end of August and the first week of September. The grapes are destemmed and pressed in total shelter from the air, naturally decanted and fermented in steel tanks at a controlled temperature (18°C) for 10 days. Maturation on the lees for 5 months in steel with the continuous mixing of the fine or noble lees, with the aim of giving greater body to the wine. Pairings It goes well with seafood, pasta dishes with vegetables, white meats and baked fish. The richness and aromatic fragrance of the cricket make it the ideal wine to accompany a dish such as veal carpaccio with celery and strawberries Production area Wine produced from grillo grapes grown organically on the Sambuca di Sicilia estate, in the province of Agrigento. Organoleptic characteristics Balanced and harmonious taste, with a delicate acidity and good persistence. Deep straw yellow.
