The historic white wine of Maculan is reborn, where three grape varieties are blended in steel tanks in spring and then rest together for at least a year in the bottle. Excellent with vegetarian first courses, fish soups, pasta and risotto, baked and grilled fish. It can be "forgotten" in the cellar for about ten years!
Colour: Intense straw yellow Nose: Complex and pleasant, mineral with hints of exotic fruit, apricot and sweet vanilla Taste: Rich, round, full, the vanilla note is persistent and the perceived minerality is found on the nose, the scent is pleasantly long. 50% Chardonnay, 30% Vespaiola, 20% Sauvignon
Location of the vineyard: The hills of the Breganze DOC Position and type of soil: Volcanic and tufa hills Careful preparation: Grapes harvested when perfectly ripe, soft pressing covered with nitrogen.
The three varieties are vinified separately; the Sauvignon and the Vespaiolo ferment in steel, while the Chardonnay ferments in partly new and partly used French oak barriques Aging: The Chardonnay is aged in barriques for 5 months with its lees, while Sauvignon and Vespaiolo are aged only in steel.
