CATAPANUS was the name of the ancient provincial delegate of the emperor, in charge of the military and civil government of the whole of southern Italy in the Byzantine period. We wanted to dedicate our most important white grape variety in our area to this authoritative figure: BOMBINO BIANCO
Denomination: PUGLIA IGP BIANCO Grapes: Bombino bianco 100% Production area: “Coppanetta” estate – 50 mt. Slm , facing north-west. Characteristics of the vineyard: extension of 2.5 hectares. Planted in 1973 with a density of 1,800 plants/ha. "Apulian tent" training system Soil: calcareous-clayey soil Yield per hectare: 80 quintals Vinification and ageing: Soft pressing of the grapes followed by static settling of the must and slow fermentation and controlled temperature. After bottling, the wine rests in the bottle for a few months to be better appreciated after release. TASTING NOTES Colour: Straw yellow Bouquet: Anise, pineapple and banana Taste: dry Pairings: Fish, shellfish, as an aperitif and throughout the meal Serving temperature: 10°-12°C
