Corresponding to about 120/130 quintals of grapes per hectare.Ground Medium limestone with a loamy-sandy textureHarvest The harvest takes place when fully ripe in the third ten days of September through selection and mechanical harvesting.Vinification The grapes undergo a very soft pressing and the resulting must ferments at a controlled temperature of about 15° - 18° in stainless steel tanks in order to retain the aromas in the product. After the first racking, the wine obtained is cold decanted and only after three months is it bottled and then aged for no less than sixty days. The refinement of the wine takes place first in stainless steel vats, then for at least three months in concrete tanks and then in the bottle for a minimum period of three months.
