Vinification
After a brief stop in a thermo-conditioned environment until the right degree of drying is reached, the grapes are softly destemmed-crushed; the fermentation takes place in steel vats at a controlled temperature, with prolonged contact with the skins; after racking, the wine is aged on the total lees for six months in small wooden barrels, then it is decanted and still kept in steel containers until bottling. The yield of grapes into wine is about 48%.
