GRAPES 100% Chardonnay HARVEST From 20th to 26th August VINIFICATION Fermentation using the pied de cuve technique, harvested one week before the rest of the grapes. Once the alcoholic fermentation started, 60% of the must was transferred to French oak barrels. The other 40% was transferred to a concrete egg where it also completed its refinement.
AGING 6 months on the fine lees and at least 2 months in the bottle
