VARIETY Red berried grapes 100% PRODUCTION TECHNIQUE After the harvest and processing of the white grapes, the basic cuvée is obtained which is introduced into stainless steel autoclaves where a first fermentation takes place (the wine is kept on the lees noble wines for a period ranging from 3 to 5 months.After the first fermentation, the following are added: sugars, yeasts and nutrients to start the refermentation which takes place in small autoclaves at low temperatures.After the refermentation, the sparkling wine is decanted and filtered in isobaric conditions, then it is refrigerated, filtered again and bottled. FOAM Abundant and evanescent, fine-grained and persistent perlage. COLOR Coral pink, bright and clear. TASTE Fruity, delicate bouquet, with scents of violet and wild rose. PAIRING Ideal as aperitif Recommended to accompany fish-based and mushroom-based dishes ALCOHOL CONTENT 12% vol RESIDUAL SUGAR 1.1% SERVING TEMPERATURE 6/8°C
