COLOR Straw yellow with greenish reflections BOUQUET fruity and floral SUGGESTED PAIRINGS Excellent as an aperitif, it goes well with menus based on fish or white meat. SERVE AT 10-12 °C FORMAT VINIFICATION A hand harvest is carried out in small crates, followed immediately by a soft pressing of the whole grapes. A controlled fermentation begins at 18°-20°C with selected yeasts. Stored in steel tanks, it is bottled the following spring. VINES Chardonnay grafted on Kober 5BB, planting layout 3.20 x 0.80 m, Trentino pergola. PLANT DENSITY 3,000 plants per hectare. CULTIVATION Short pruning, organic fertilization in biennial/triennial rotation, working the soil in alternate rows, drip irrigation only. Vineyards in organic cultivation with ICEA certification. PRODUCTION Does not exceed 10,000 kg/ha
