SERVE AT 12-14 °C FORMAT VINIFICATION A hand harvest is carried out in small crates and immediate soft pressing of the whole grapes. A fermentation begins in small barrels with selected yeasts. After about 15 months of refinement, the blending takes place and bottling follows. VINES Chardonnay grafted on Kober 5BB, planting layout 2.20 x 0.80 m, guyot system. PLANT DENSITY 5,000 plants per hectare. CULTIVATION Short pruning, organic fertilization in biennial/triennial rotation, working the soil in alternate rows, emergency drip irrigation. Vineyards in organic cultivation with ICEA certification. PRODUCTION Does not exceed 9,000 kg/ha
