The Friuli Colli Orientali DOC "Madonna D'Aiuto - Historic Label" by Butussi comes from Pinot Grigio grapes harvested manually; spontaneously fermented and aged, then in oak for 8-10 months, it is produced only in the best years. Of clear gastronomic versatility, it is appreciated for a great balance between freshness and softness; it will also acquire complexity over time.
LAND: Hillside with South-West exposure, Di colluvial alluvial origin. Composed of marl in depth and superficial limestones. During the summer period the descending currents from the alps are channeled into this fund, they create thermal excursions which exceed twenty degrees between day and night HARVEST: Manual, the harvest period is evaluated visually to the achievement of the optimal maturation of the grapes, which in this area is postponed by a few days compared to the territorial average. VINIFICATION: The grapes are destemmed and left to macerate with the skins, until the spontaneous indigenous fermentation starts. Manual punching down is performed during fermentation daily, until the natural conclusion of the fermentation. The squeezing is with a traditional press, modified to work on low pressure. After 24 hours of static decantation, it is sent still turbid inside traditional oak barrels 700 liter Friulane for 8-10 months of maturation. Bottling usually takes place during the last quarter of moon after Easter. AGING IN THE BOTTLE: 12 months, usually entry into the market coincides with Easter of the following year to that of bottling NUMBER OF BOTTLES AND PRODUCTS YEARS: Only the best vintages become part of this selection, 1298 were produced in the 2018 harvest 0.75l bottles CHARACTERISTICS OF THE WINE: Its color is intense " COPPER ", of the metal Copper from which takes its name or onion skin. On the nose orange blossom and jasmine, apple and pear, with a finish of small red fruits. On the palate it enters slim but decisive with a strong component mineral and saline, of great taste-olfactory correspondence, with dry finish and very long persistence. Wine with great gastronomic versatility, appetizers, soups, risottos, but also fish and white meats.
