The White Angel is a Cuvè, it is aged in wooden barrels and is cared for and harvested according to the lunar tides. It is fresh, fruity and smooth to the taste. The palate shows spring flowers and a hint of caramelized citrus. At the same time, the grapes give the cuvée a beautiful minerality and volume. We can recommend this great expansion with seafood, shellfish or grilled fish.

Composed of deep marl and clayey sand from hilly runoff on the surface. It is a small plateau or terrace located on the slopes of the Rosazzo hill. Vineyard always very breezy and cool, which allows slower maturation but able to give freshness and nerve to this wine. HARVEST: Manual, the harvest period is evaluated visually to the achievement of the optimal maturation of the grapes, which in this area is postponed by a few days compared to the territorial average. VINIFICATION: The three grapes are harvested separately upon reaching their correct maturation. To keep the temperature low, the harvest takes place at break of dawn. The grapes are separated from the stem and kept in maceration at natural temperature for 12 hours. In pressing it collects only the first must, avoiding too much squeezing energy that would extract oxidizing and vegetable components. The entire must is fermented in oak barrels traditional (not roasted) steam folded, 500l and 700l Bottling usually takes place during the week after Easter, following the lunar calendar. AGING IN THE BOTTLE: 12 months, usually entry into the market coincides with Easter of the following year to that of bottling CHARACTERISTICS OF THE WINE: Brilliant straw yellow colour. Ample, intense bouquet, of great elegance and persistence, with notes of honey and fresh spring field flowers, quince and candied citrus fruits. It has a dry, savory and very long ethereal flavour persistence. It goes well with shellfish, oysters, caviar, sturgeon, mussels. It also goes perfectly with vegetables and light meats, with delicate seasonings, even if rich. SERVING TEMPERATURE: 1 2 – 14°C
