A great wine of the Friulian tradition, Sauvignon, rediscovers its origins in this "Genesis" DOC, a product that conquers nose and smell after a few moments, and which amazes for its excellent evolutionary potential. The grapes, grown in soils rich in limestone and sandstone, come from a single vineyard parcel, whose vines are around forty years old. A bottle with which the Valentino Butussi company raises the bar decisively, proposing to tell the terroir of the Colli Orientali del Friuli with the excellence of limited production, where quality reaches truly remarkable peaks. Just under two thousand bottles for a label that cannot be missing in the cellar of every enthusiast.

Description
LAND: Hillside with South-West exposure, Di colluvial alluvial origin. Composed of deep marls and superficial limestones. During the summer period the descending currents from the alps are channeled into this fund, they create thermal excursions which exceed twenty degrees between day and night HARVEST: Manual, the harvest period is evaluated visually to the achievement of the optimal maturation of the grapes, which in this area is postponed by a few days compared to the territorial average. VINIFICATION: The grapes are harvested at first light of dawn, to keep the temperature low. The grapes are coming separated from the stem, and cooled to a temperature of 8°C for the cold maceration lasting 24 hours. In pressing it collects only the first free-run must, avoiding too vigorous squeezing which would extract oxidizing components. Stabling lasts three days, in the first two days the must is kept in motion, to maximize the extraction of the precursors aromatics, on the third day, it is left to decant for static clarification. The juice thus obtained is decanted and done ferment at a controlled temperature. 15% is fermented in traditional oak barrels, e it will be reintroduced into the original wine after refinement. Bottling usually takes place during the week following Easter, following the lunar calendar. AGING IN THE BOTTLE: 12 months, usually entry into the market coincides with Easter of the following year to that of bottling CHARACTERISTICS OF THE WINE: Color Straw yellow with light green reflections On the nose typical notes of elderflower and boxwood, exotic fruit, white peach and lychee. In the mouth it explodes with vehemence, emphasizing the mineral vein and closing on a velvety, but long and persistent finish. It goes well with vegetable soups, "soufflè" and flans, based dishes of herbs or eggs with asparagus.
