The soil is of fluvial-alluvial clayey origin with a low PH. Manual harvest in crates in the last ten days of August. Vinified after soft pressing of the grapes followed by alcoholic fermentation at low temperature to preserve the fruity notes. Aged in the bottle for 40 months on the lees. Residual sugar 1 gram litre. Straw yellow color with golden notes. Fine and persistent perlage. Fragrant bouquet with hints of fruit, spices and flowers. Intense, savory, persistent and harmonious in the mouth. Suggested serving temperature is 4-5° C. Perfect as an aperitif, it goes well with raw fish and fish first courses.
