Zenta Friuli Colli Orientali Bianco Riserva DOC 2019 - Perusini

The Zenta of the Friulian Perusini winery is produced from a careful selection of the best bunches of Sauvignon and Chardonnay, vinified in two different phases. The Chardonnay grapes macerate for 4-5 days and are then placed in fermentation vats: in this initial phase the yeasts perform a very important function as they protect the grapes from the oxidation process and ensure that no chemical elements are used. The must is then subjected to the pressing phase during which the separation between grape and juice takes place: at this point we move on to refinement, half of the must in barriques and the remainder in steel. The bunches of Sauvignon undergo the same procedure, except for the maturation phase which in this case takes place entirely in steel. This wine owes its name to the battle of Zenta, a Serbian city which was the scene of the battle between the imperial army led by Prince Eugene of Savoy and the Ottoman army which was defeated; at the head of the regiment there was an ancestor of the Perusini family, who, once he returned from the battle, had the villa of Tapogliano built, where the cellar is located today.
