The grapes come from vineyards raised partly with the simple Trentino pergola and partly with gouyot, in loamy soils.These are small agricultural realities selected for a quality project.After the harvest the grapes are subjected to an immediate soft pressing, after a short maceration the fermentation takes place at a controlled temperature with the use of selected yeasts, followed by an aging in steel.
