Harvested exclusively by hand in small 15 kg boxes. Soft pressing and static clarification of the must at low temperature for 24 hours. Fermentation takes place at 15 C° with selected yeasts. The wine then ages on the lees for 5 months in stainless steel tanks before bottling. Malolactic fermentation does not take place.
