For some years we have wanted to compete with Viognier, the white grape variety that grows in symbiosis with Syrah, brought to the Rhone Valley, they say, from Sicily by the Romans. It was the only possible option consistent with the path we are following, which is based on the assumption that the Cortona area is a Rodanian enclave in Tuscany. Only Viognier, therefore, could complement our Syrah; Viognier is the only "intruder" vine that could be accepted in a monovarietal company like ours.
This is why we decided to plant a new small vineyard on our "Poggio del Sole" farm to make what will be our only white wine. The breeding methods and cultivation practices are the same, characterized by extreme rigor and total intransigence, which we adopt in our Syrah vineyards, in order to obtain the highest possible quality. The yields per hectare are around 50 quintals for 5,000 plants and the harvest time is between the end of August and the first days of September. The white version of our Linfa has in common with the red one (based on Syrah) the totally manual vinification method and the very limited edition (about 3000 bottles at most). Within a range entirely characterized by absolute craftsmanship, they are our two most "garagiste" labels, both micro-productions within a family of wines that are all already produced, always, in a highly limited edition, and for this reason share the same name, acronym of the names of my family members. After a particularly soft crushing and destemming and an equally delicate pressing, the must ferments spontaneously (thanks to indigenous yeasts) partly in steel tanks at a controlled temperature and partly in French oak barrels. Once fermentation is complete, half of the mass is transferred to concrete barrels and the other half to barriques, where it ages for several months on the noble lees, acquiring complexity and volume thanks to frequent batonnages.
