We dedicate the Cuvée Franco Ziliani Franciacorta 2008 to you, dad. It was you who insisted that the first bottle be called "Pinot di Franciacorta", that that wine was inextricably linked to its territory starting from the name. And right in the name now you and Franciacorta are one in this Cuvée. We include here the best Chardonnay from the Arzelle vineyard in the 2008 vintage, aged in the bottle for eleven years because it is in the long refinement that the most excellent quality is expressed, without dosage, so that only the essence of Franciacorta stands out.
GRAPES: 100% Chardonnay, from the Arzelle vineyard raised in Borgonato with high density of plantings HARVEST PERIOD: 28-30 August 2008 YIELD: 8,000 kg of grapes per hectare, with a must yield of 30% equivalent to 3,200 bottles per hectare. VINIFICATION: the "heart" of the free-run must, obtained from soft and progressive pressing carries out the fermentation alcoholic in steel vats; at the end, some matches are transferred to oak barriques, where they are aged for 6 months contact with yeasts. MATURATION: preparation of the cuvée in spring following the harvest, with 100% wines of the vintage chosen from the best selections. Second fermentation in the bottle and subsequent refinement in contact with yeasts for at least 11 years and 7 months, followed by a minimum of 6 months after disgorgement. DOSAGE: Not Dosed
