Chardonnay (80%) and Pinot Noir (20%), coming from the best estate vineyards, many of which have a high planting density.
SURRENDER
9,500 kg of grapes per hectare, with a must yield of 40%, equivalent to 5,060 bottles per hectare.
WINEMAKING
soft and progressive of the bunches with fractionation of the musts; alcoholic fermentation in steel vats and refinement of the best parcels in oak barriques, where they mature for 6 months in contact with the yeasts.
MATURATION
Preparation of the cuvée in the spring following the harvest, exclusively with the wines of the vintage. Second fermentation in the bottle and subsequent refinement in contact with yeasts for at least 36 months, followed by another 3 months after disgorgement.

Soft and abundant foam, subtle and persistent perlage.

Straw yellow with slight antique gold reflections.
ORGANOLEPTIC CHARACTERISTICS: FRAGRANCE
Intense, persistent and complex bouquet, with notes of ripe yellow candied fruit blended with hints of Chantilly cream.
ORGANOLEPTIC CHARACTERISTICS: TASTE
On the palate it reveals an elegant structure and a notable balance between the roundness given by the maturity of the wine and the freshness of the acid strength.
COMBINATIONS
It accompanies the entire meal, because it enhances the flavor of appetizers, pasta and rice first courses, white and delicate meats, fish and even mature cheeses.
