Gently destemmed, the grapes are softly pressed and the must thus obtained is clarified through decantation. Fermentation follows at a controlled temperature in stainless steel containers. At the end of fermentation, the wine is kept on the yeasts for a few months, to increase its flavour, creaminess and suitability for ageing. Once bottled, the wine rests in temperature-controlled rooms for refinement.
