PRODUCTION TECHNOLOGY Once the harvest is reached, the now ripe Muscat grapes are softly pressed. The product obtained is placed in a cold room at a temperature of 0°C in order to inhibit the fermentative activity. Subsequently, each single batch will be filtered and placed in an autoclave; this special container allows to retain the carbon dioxide and heat the product still totally sugary up to a temperature of 15 °C. This favors the start of fermentation which will last up to 5.5% vol. of alcohol. At this stage of the process, the product which has now become Moscato d'Asti is cooled to 0°C to block the fermentation. After the month of October, the bottling takes place in the first days of November.
TASTING NOTES A Moscato d'Altura, full-bodied, velvety and with an intense aroma with hints of candied fruit, acacia flowers and a musky background. The olfactory perception of "violet" is unique.
GASTRONOMIC COMBINATIONS Served at a temperature of between 10 and 12 °C in crystal glasses, it delicately accompanies desserts, fresh fruit and fruit salads.
