Alastro - named after a wild flower that grows around our cellar - is a blend based on Grecanico, combined with a small percentage of a distinctly aromatic variety: Sauvignon Blanc. Finely aromatic, delicately structured, with aromas of tropical fruits, fresh citrus and white flowers. It goes well with first courses of Mediterranean cuisine and vegetarian cuisine.
VINEYARD: Ulmo. VARIETY: Grecanico, Sauvignon Blanc. TYPE OF SOIL: medium-textured, medium-deep to deep soil with an abundant skeleton consisting of pebbles, slightly calcareous and with fractions of dark and vegetal soils. ALTITUDE: 200 - 250 m asl YIELD PER HECTARE: Grecanico 100 quintals. Sauvignon Blanc 75 quintals TRAINING SYSTEM: spurred cordon. PLANT DENSITY: Grecanico 3,800 / 4,500 plants per hectare. Sauvignon Blanc 3,800 plants per hectare. HARVEST PERIOD: Grecanico 25-28 September. Sauvignon Blanc 30-31 August. VINIFICATION: after destemming and soft pressing, the must decants at a low temperature and ferments at 15 ° C. At the end of fermentation it is refined on the fine lees for about 4 months in steel tanks where a bâtonneur keeps the lees in suspension. BOTTLING PERIOD: January. ALCOHOL CONTENT: 13% vol. TOTAL ACIDITY: 5.90 gr / l. PH: 3.41. AGING CAPACITY: to drink immediately or to age up to 4-5 years, Grecanico surprises in its capacity for evolution. BOTTLE SIZE: 0.75 l. ORGANOLEPTIC NOTES: The Grecanico in the 2019 vintage gave its best through an exceptional balance between strength and elegance. On the nose, the mineral and floral notes are perfectly integrated with each other, with aromas of cedar, melon, pears and wild white flowers, boxwood stand out. In the mouth it is vibrant, yet creamy and silky with notes of white peach. PAIRING: The contrast between flavor and sweetness gives it a gastronomic strength that makes it suitable also for combinations with simple dishes such as a warm seafood salad and more complex dishes such as a spicy Asian dish in sweet and sour sauce. It goes well with first courses of Mediterranean cuisine and vegetarian cuisine. Serve at 10 ° C.
