Pecorino produced with grapes from the Theatine municipality of Ortona, in the province of Chieti. It consists exclusively of Pecorino grapes, left in contact with the skins for about 12 hours at a low temperature and subjected to soft pressing. The must ferments for 80% in steel vats at a temperature of 12 ° C and for the remaining 20% in oak barrels. Straw yellow in color with light greenish reflections, it expresses itself on the nose on notes of pear in the first place, followed by balsamic hints witnessing the quality of the wood used in fermentation. Already at the entrance it is enveloping and structured, pleasantly fresh and persistent. Ideal as an aperitif, it goes well with all fish dishes.
Grape Variety : Pecorino Production Area : Hinterland of the municipality of Ortona and neighboring municipalities. The vineyards are all exposed to the South-East so that they can enjoy the best hours of light. Vinification : soft pressing, static clarification of the must obtained. Subsequent fermentation at a temperature of 14 ° C. The juice is fermented in a stainless steel tank. Idea del Vino : Pecorino is a native Abruzzo vine, whose clusters are small and of low production per hectare. The training system is for the most part an Abruzzo pergola. Sensory characteristics : straw yellow in color with greenish reflections. The aromas of this wine include all white pulp fruits and in particular pear. At first glance it immediately reveals a good structure and a lively freshness. The aftertaste is intense and persistent. Food pairings : it is a very versatile wine in terms of table pairings. It can be proposed as an aperitif, perhaps combining it with an appetizer of medium-aged cheeses. Serving temperature : about 10-12 ° C
