Production area: Sambuca di Sicilia (AG) Grape variety and vinification: Nerello Mascalese. After the selection, the grapes are crushed and de-stemmed. The must goes through a short cold maceration. After static clarification, the must is fermented in stainless steel tanks at about 16-18. After 3 months of aging on the lees, the base wine is fermented in small stainless steel pressure tanks (prize de mousse) following the Charmat method.
Color and combination: Bright white. Excellent as an aperitif, it excels with cheeses, fish dishes, soups, amber fruit, vegetables and desserts.
