Vinification: the harvest takes place manually in boxes, carefully selecting the best bunches. In the cellar the grapes are subjected to soft pressing and the must is fermented in stainless steel tanks at a controlled temperature of 16-18 ° C. Assembled the various fractions to form the cuvèe, the base wine is placed in the bottle with selected yeasts where the second fermentation and subsequent refinement will take place following the Classic Method sparkling process.

Description

Production area: inland from Ortona, in the locality of Pietrosa. Soil: medium-textured, basically clayey . Grape variety: grapes obtained from the Cococciola, Trebbiano and Chardonnay vines. Preparation of the couvèe, refermentation in the bottle and rest. Maturation for several years in underground vault naturally conditioned at a temperature of 14/17 °. Refermentation with selected commercial yeasts. Organoleptic characteristics: creamy and fine foam, fine-grained bubbles, quite persistent, straw-green yellow color, intense, fruity aroma of ripe fruit, light flavor of bread crust and hay, dry, fresh, warm taste, with a soft and balanced body .

Food matches: potato lasagna and mullet fillet, seafood crudité.
