Denomination: Sparkling Wine Grape Variety: Pecorino
The Pecorino grape, thanks to its wide aromatic heritage, is particularly suited to sparkling wine. In Abruzzo Tenuta Ulisse made it sparkling for the first time. An ambitious and simple project at the same time: using the native Pecorino vine to produce a Charmat Method Spumante in Abruzzo. The goal is, once again, to focus on the peculiarities and richness of our land, to offer these vines a new way of telling themselves and expressing their personality.
Type: Brut Quality Sparkling Wine Charmat Method. Grape variety: Autochthonous vine from the Adriatic side of the central Apennines (Marche and Abruzzo). Bunch is medium-small, cylindrical and elongated, with a small spherical, golden yellow grape, with a robust skin. the reason for the denomination equal to the well-known cheese is uncertain but it is probably due to the seasonal movements of the shepherds who, on their return from the mountain areas in September, brought their flocks to graze on the vineyards where the fruit had already been harvested. Vinification: Sorting and placing of the whole grapes in the exclusive "Ulisse" cooling tunnel and sudden lowering of the temperature with consequent cryomaceration of the skin of the skin and extraction of the aromatic compounds Destemming, pressing in an inert environment, cold static clarification controlled at 11 ° C in thermo-regulated and inertized tanks. Sparkling wine method: In autoclave. The must stored in refrigerated tanks at a temperature close to 0 ° C, is placed directly in an autoclave where after the first fermentation in steel at a controlled temperature, the second fermentation takes place in an autoclave with the Charmat method. Subsequent refinement in the bottle for 3 months. Organoleptic characteristics, combinations: Lightly charged straw yellow color and a fine, elegant and continuous perlage. Intense aroma thanks to the Pecorino's tropical fruit varietal personality. The aromatic note caught on the nose continues and develops on the palate, spreading in breadth and depth. Rich in complexity and elegance. To grasp its richness and aromatic complexity, we recommend it in solitary tasting as an aperitif. Wishing to accompany it with flavors, we indicate it with raw fish such as tuna, cuttlefish or octopus or turbot carpaccio or with fish pasta and risotto, fresh cheeses, baked fish. Serving temperature: 6/8 ° C
