Valvolpara was born from a recovery project of old vines of the Vespaiola variety, the same with which the Passito Torcolato is produced, reproduced by mass selection and grafted in 2009 in the vineyard in via Valvolpara, in the locality of Branza, in Breganze.
Valvolpara was born from a recovery project of old vines of the Vespaiola variety, the same with which Torcolato is produced, reproduced by mass selection and grafted in 2009 in the vineyard in the Valvolpara area, in Branza, in Breganze. There are only 5000 vines in one hectare of extension, on predominantly clayey soils. The grapes are harvested by hand in the first ten days of September. Its vinification sees a combination of different techniques with which the bunches are usually worked. First of all, a light drying of 10 days in the cellar in an environment with controlled humidity and temperature. Then a cold maceration on the skins for 4 days which enhances the extraction of aromas and makes the nose rich and intense. Finally, the soft pressing and fermentation in steel for about 15 days until the aging on the lees in steel tanks for 4 months. A pleasantly fresh and fruity white wine suitable for many occasions. Valvolpara today opens a new path: a more structured and important white wine that does not give up its pleasant freshness. The first year of production is 2018 and the number of bottles is very limited: only 639! Don't miss it!
