VINIFICATION Harvest in the last week of August. Grapes totally crushed and destemmed, pre-fermentation maceration at 8 degrees for about 15 hours, followed by soft pressing. Alcoholic fermentation in reduction at a temperature of 16 or 17 degrees for a total duration of 10 days. Aging in concrete tanks with its own fine lees with weekly battonage for a total period of 5 months
COLOR Golden yellow with coppery reflections
BOUQUET The nose is a beautiful combination of hints of fresh fruit and warm notes of wild strawberries, then continuing with hints of apple and citrus tones
PAIRINGS Excellent with first and second courses of land and sea, with vegetarian dishes and fresh cheeses.
TASTE In the mouth it has a good flavor, full, creamy with sensations that recall the apple and grape of origin
NOTES The company is based on the principles of organic agriculture and therefore uses only and exclusively natural fertilizers and herbicides: this determines the absolute genuineness of the wines. For the Pinot Grigio Ramato DOC, pure Pinot Grigio grapes are used, which reach the perfect degree of ripeness thanks to the local climate and the soil particularly suitable for viticulture. The "coppery" looks like a rosé wine, but it is not: it is a "coppery" white. It is obtained with maceration of the skins, longer than usual, of Pinot Grigio grapes, which having a naturally "coppery" color, transfer this particular characteristic to the wine. Unfortunately very few producers maintain this original characteristic of the grape and prefer to make a white grape that is not white.
